INGRIDIENTS:
For golgappe/ puchka:
- Wheat flour ( 1 bowl)
- Suji/ semolina
- Salt
- Water to kneed
- Oil
For stuffing:
- Boiled potato
- Spices : red chilli, salt, chaat masala, jeera powder,
- chopped onion
- Green chillies
- Coriander leaves
For puchka water ( sour and spicy)
- Coriander leaves
- Mint leaves
- Tamrind/ imli
- Kala namak
- Lemon
- Salt
- Jeera powder.
- Boondi (optional)
Process :
Take 1 bowl add 1/2 cup of wheat flour to it and 1/4 cup suji ( suji will make puchka crispy) kneed with water and sprinkle of oil add salt according to taste
Kneed properly until suji granules Mix properly in dough sprinkle water time to time and kneed for 5-10 min.
After this make Very small rotis of dough and side bt side heat a kadhai and add oil and deep fry golgappe, fry till golden brown. GOLGAPPE IS READY
NOW FOR STUFFING: Take 4-5 boiled potato mash it add chopped onion, green chillies, salt As per taste , chaat masala 1/2 teaspoon, kala namak 1/4 teaspoon And mixture is ready
FOR WATER: Take a grinder add chopped coriander leaves, mint leaves , tamrind pulp (should be soaked in warm water for 15-20 min before) Extract tamrind pulp from warm water with the help of strainer mash it properly and add strained water to grinder . ( lemon 3-4 if you are skipping tamrind) add salt as per taste, kala namak 1/4 teaspoon, chaat masala 1/2 teaspoon, jeera powder 1/3 teaspoon. Mix it properly in grinder after that strain it with the help of water in different bowl add ice. Water is ready and you are ready to eat home made golgappe .
